RECIPE — LEMON‑PAPRIKA TOMORROW COUSCOUS
Bright, energising, cheap, and perfect for nights when you finally feel excited about tomorrow.
Ingredients
1 cup couscous
1 cup boiling water
1 can chickpeas
Juice of ½ lemon
1 clove garlic (or garlic powder)
½ tsp paprika
Salt & pepper
1 tbsp oil
Method
Place couscous in a bowl and pour boiling water over it. Cover for 5 minutes.
Sauté garlic in oil until fragrant.
Add chickpeas, paprika, salt, and pepper.
Fluff couscous and stir into the pan.
Add lemon juice and cook for 2–3 minutes.
Serve warm.
Notes
